RECIPE from the Martini’s Bistro kitchen:
Better Than Betty’s Meatloaf
5 lbs. ground beef
1 large red pepper, finely chopped
1 large white onion, finely chopped
4 cups corn bread stuffing
1 1/2 tsp. salt
1 1/2 tsp. black pepper
1/2 cup fresh herbs
4 cloves minced garlic
1/4 cup lea & perrins
11/2 cup ketchup
Mix all ingredients thoroughly. Make two loaves, bake at 325 degrees for approximately 1 1/2 hours (center temperature 160 degrees).
Demi-Glace for Better than Betty’s
12 oz. mirepoix, diced
72 oz. demi-glace
salt & pepper to taste
Simmer mirepoix in demi-glace for 30 minutes, strain through fine mesh sieve. Adjust flavors with salt & pepper.
