Celebrate Earth Day with a sustainable dining experience that blends farm-fresh flavors with eco-friendly elegance at Jill’s Restaurant on Tuesday, April 22. The vegan prix-fixe dinner menu ($49 per person) will feature four courses including Tuscan ribollita soup with Colorado hot-house tomato broth, kale, white beans and ciabatta; a grilled pesto Caesar salad with toasted pistachio, roasted garlic, radicchio, Forevergreen Farms micro shiso and lemon crunch; Colorado mushroom hash with the holy trinity, baby gold potato, coconut cream, smoked paprika and locally grown pea sprouts; and a wild blueberry crumb cake with lemon Chantilly.
