If there is one thing that unites Americans, it is our love affair with pizza. The indefatigable desire for bread, tomato sauce, and gooey cheese is so ubiquitous in the United States that it has led to multiple regional varieties. Having been born and raised in Michigan, Detroit-style pizza holds a special place in my heart and seems to be gaining popularity throughout the rest of the country.

The history of Motor City has had a profound and surprising impact on the beloved dish. To be a true square pizza, it must be baked in steel pans that were originally intended to catch oil drippings or hold small parts in automobile factories. Another necessity is the use of Wisconsin brick cheese, similar to cheddar though with a slightly higher fat content and just a little sharper. Brick cheese is what gives the lacy, crispy edges along the crust, and the higher fat helps to crisp the focaccia-like crust that characterizes the dish.

While Jet’s Pizza is readily available as well as nostalgic for me, I set out to find local pizzerias that could accomplish a truly great Detroit-style pie. Fortunately, the options here in Colorado are fantastic and worthy of celebration.

On a sunny day in the warming weather, I meandered down South Public Road here in Lafayette to Ghost Box Pizza, a cute and modern pizzeria owned by the producers of Stem Ciders. The bright, inviting colors in the dining room make one feel immediately welcome. I met with the general manager Taylor Baeza and marketing manager Morgan McGahen as my liaisons for Ghost Box.

I settled at a table near the bar and while my pizza was baking, conversed with my contacts to find out a little more. I asked about the connection of Ghost Box to Detroit-style, and Morgan said, “Our founders and owners are both from Michigan.”

Taylor shared more about their pizza-making process. Most interesting is the bulk fermentation time, where the dough sits to develop flavor. Taylor said their fermentation time is about an hour and a half.

The love from the Mitten can truly be tasted in its pizza. It wasn’t long before the OG Pepperoni pie had come out of the kitchen. The crispy-edged crust had shown the brick cheese had done its work, and a tangy tomato sauce was poured in racing stripes on top of the pie to keep the crust crispy. Dollops of ricotta garnished each piece and gave a nice, creamy contrast to the airy, bready crust and lacy cheese around the edge. I washed down a couple of slices with a Stem Cider flight showcasing what Morgan appropriately called the “Michigan apple love.”

The following day with the sun still shining, I made a short drive to Broomfield to Rock City Pie and Ice to meet with Chef and owner Jason Dascoli and his wife Grace. We spoke while he made pizzas for us to enjoy. In a small, unassuming location comes big flavor. When I asked about what sets Rock City Pie apart from the big chains or New York spots, he said, “not only the ingredients that I use,” but also, “It’s all about the technique.” He said the 48-hour bulk ferment time makes a difference in his crusts.

Rock City Pie and Ice Owner and chef Jason Dascoli

The pies came out of the oven sizzling audibly, and Chef Dascoli let them wait and settle for a moment before he knocked them out of the blue steel pans. As he grabbed the wide-blade cutter and sliced up the pizza, the crunch of the crust could be heard throughout the restaurant.

We tasted Chef Dascoli’s classic cheese, the Calabrian topped with pepperoni, capicola, jalapenos, and his thirteen-cheese blend and the Arthur, an artichoke, leeks, chicken, and bacon delight. The crispy edges and springy, porous crust brought my tastebuds back to Michigan. Chef Dascoli’s pies are topped with his own delicious tomato sauce in the traditional racing stripe fashion as well.

With Chef Dascoli’s pizza I drank a can of Vernors, a Michigan-made ginger ale that is somewhat difficult to find in Colorado.

The nostalgia I felt while eating at both Ghost Box Pizza and Rock City Pie and Ice was immeasurable. It’s worth noting that both restaurants truly showcase their love and pride for making delicious pizza. Interestingly, they exhibit the two schools of thought when it comes to the crust. Whether a shorter fermentation time or longer, both produce fantastic results. I’ll be back to both restaurants soon to enjoy the taste of Michigan out here in the mountains.

It’s summertime and canned cocktails are the way to go. The durable packaging is perfect for taking beverages outdoors from camping to picnics or anywhere else you want to guard against container leaks or where glass isn’t allowed.

Beverage makers have started to figure this whole canning thing out, and it’s possible we’re entering a golden age of cocktails in a can. Boulder County has had a front row seat to the action with the evolution of canned beverages and technologies in our backyard. This growth started with Oskar Blues’ ability to convince drinkers that high-quality beer could come in cans (Thanks, Dale’s Pale Ale!) and included the presence of Ball Corporation’s aluminum packaging and the founding of Wild Goose canning lines.

When things come in cans, we jump on them, so here are some canned specialties you can find in our area this summer. Our list purposely didn’t include wine, seltzer, beer, and kombucha because that offering category is already familiar to customers. Instead, we focused on other crafted alcoholic and nonalcoholic tasty drinks that are part of an emerging trend.

A shrub displayed with food.
Rooted Craft Kitchen – Cherry Amore in Boulder

Rooted Craft Kitchen at Avanti Food and Beverage was the first place that introduced us to a shrub — a beverage made from an acidulated fruit-based base that can be used in either craft cocktails or mocktails. Their zero-proof form, called a Cherry Amore, is a great option for summer drinking that keeps you cool. It’s made with fresh ingredients including cherry syrup. The vinegar balances it all with a splash of acid and is as nuanced as anything we’ve ever had, alcoholic or not. We can picture bringing it to a barbeque, having it after a hike, or sipping it on our porch.

Stem Ciders – Ciders and cocktails in Lafayette

Stem Ciders has taken advantage of canned packaging for years now, and they still offer great innovative options for canned items ranging from traditional to tangerine to the more floral lavender. There are also taproom-only canned mixed beverages including a Singapore sling (tart, with gin-like botanicals), a rum runner (tropical), and a cobra’s fang (dry and forward). What’s even better is that if you head to Stem’s Lafayette restaurant Acreage, they have the perfect spot to enjoy the outdoors in one of their Adirondack chairs, next to the fire, near their orchard, with a view of the Flatirons — perfect for a late summer evening.

Photo courtesy of Abbott and Wallace

Abbott and Wallace Distilling – Six distinct cocktails from Longmont

Longmont’s Abbott and Wallace Distilling makes it easy to grab a cocktail to take with you wherever you’re heading this summer. Six options range from their La Chupacabra, which blends Cobañero whiskey with apple, ginger, lime juice, and seltzer, to a canned Tom Collins, a mint julep, a gin and tonic and an amaro spritz. We like what we’re drinking here, and we like that it makes it easy to bring a full-fledged adult beverage with you as you get active. But we also love how tied in this business is with the community. Supporting them is, truly, supporting a hometown business.

Photo courtesy of The Old Mine

The Old Mine – Traditional, pear, and adjunct Handlebar hard ciders in a can from Erie

The Old Mine crafts their ciders locally in Erie, right off of County Line Road and serves them at their adult-only taproom in their production facility or at their restaurant on Briggs Street. However, these ciders can literally travel a lot further once they’re canned. The traditional recipe is always our go-to, and if we don’t have that, we enjoy the lighter pear cider. But these aren’t the only two options for packs. There are spicy, fruit-based, and bourbon options that pair well with summer foods.

Infinite Monkey Theorem – Peach bellini wine cocktail from RiNo

Bellinis are a great summer drink, and this one, made by the winery that dialed back all their fermented grape fuss, made wine accessible, and put it into cans. This cocktail is refreshing enough for a brunch, picnic, or even to sip on the water whether you’re canoeing, paddleboarding, or rafting. It’s also enjoyed by a range of tastes, so if you bring it with you, your friends are going to take you up on an offer to share.

Photo courtesy of St. Vrain Cidery

St. Vrain Cidery – Fruit-forward and creative ciders from Longmont

For a few years now, St. Vrain Cidery has been providing the public with all sorts of ciders from their spot tucked into an alley on Terry Street. While they offer ciders that are both made in house and made elsewhere, they take care to seasonally curate what they put on tap. This summer’s offerings include multiple fruit-forward possibilities including their dry chokecherry, which is tart and particularly summer-sippable.

The Friday session for the Great American Beer Festival’s 40th anniversary wasn’t blessed by the crisp fall weather the festival often enjoys. Instead it was gray, damp, and a little chilly. In other words, perfect weather for a festival-appropriate warm flannel and malty beer.

I headed to the Colorado Convention Center to pick up my press pass wondering how GABF’s return after a two-year hiatus due to COVID would be.

There were some clear changes when compared to a few years ago, though overall it was still the event I’d grown to love. The Boulder County brewers I talked to were glad to be back and, as we started to walk through the rows of booths and beer drinkers, we found ourselves talking with Eric Briggs, co-founder of Lafayette’s Liquid Mechanics Brewing Co. Between pours of Key Lime Gose, he shared his thoughts: “An absolutely awesome event. It’s weird, different to be here.” He added, “So much about downtown has changed. Falling Rock isn’t here. Freshcraft isn’t here anymore. But it’s still great to be back and incredible to see everyone here.”

As we walked further into the hall, we took note of what was the same as years past and what had changed. The first thing we noticed were fewer stalls and ample amounts of floor space, likely due to the fact that recent construction at the convention center resulted in 25% less floor space. There were still more than 500 brewery booths, a handful of food trucks, and live entertainment that went beyond the well-known silent disco.

We also noticed more costumes, including our favorite, a sparkly Elton John-Dodgers baseball player, and the festival’s ever-present bagpipers. We were also glad to see glasses rather than plastic cups had returned. There were three types: one for general guests, one for brewers and media, and one for PAIRED® attendees, an option that allows the guest to experience beer and food pairings.

Paired sessions felt different to us this year as well. It felt more crowded, with lines that moved faster but were longer than what we recalled from years past. We loved each of the pairings we tried and thought particularly highly of Wibby Brewing’s pairing of Jack’s on the Rocks, a Rauch Märzen Steinbier lager created with Jack’s Abby Brewing, with duck fat, mushroom, and chicken salt popcorn.

We were excited to see Boulder County chefs here, including Kelly Whitaker and Mara King of Basta and Dry Storage, who coordinated the Wibby pairing. As part of this, they added an equally delicious pairing of kimchi watermelon with Wibby’s Home Team pilsner. In another part of the room, Daniel Asher of River and Woods and Ash’Kara coordinated with Oregon’s Deschutes Brewing, pairing a Middle Eastern “crunch” taco with Deschutes’ imperial stout and a raspberry quad with chevre tartlets.

We returned to the beer hall to stop by some local brewers at their booths. We saw that Howdy, once just a fun name for a delicious pilsner, has become its own brand with its own GABF booth since being bought by the folks at Stem Ciders. Niwot’s Fritz Family Brewers was also pouring their well-loved standards. Across the hall, Robin Wibby, co-owner of Wibby Brewing poured for fans, handing out blowup pink flamingos to enthusiastic beer drinkers happy to have anything crazy.

At one point, we found ourselves on the receiving end of a Rumpkin pour from Adam Avery, namesake of the nearly three decades-old Avery Brewing, who talked to us while pouring Rumpkin into our glass. He was as enthusiastic as anyone else in the hall. “It’s f***ing great. I love the energy. I love the people,” he said. “After the years of it not happening, everyone seems generally happy to be here and enjoy great craft beer.”

Of all the people we spoke with, he was the most likely to have attended more GABFs than anyone else. We asked how this one compared to the first. “Funny thing is, I can’t remember.” he said with a sly grin. “Must have been fun.”

Through the years, it’s perhaps the parts of the experience that haven’t changed that keep us coming back. Craft beer, friends, costumes, pretzel necklaces, and fun — whether it’s entirely remembered or not.

Good times.

Last month’s biggest food news was the loss of Craig “Lefty” Harris, owner of the iconic Lefty’s Pizza and Ice Cream on 2nd Avenue in Niwot. He was killed in an automobile accident on Hwy 119 and the community will not be the same. He left his mark on the community of pizza lovers as much for his hospitality and legacy of service as for his pies and his history as one of a team of scientists that discovered Neptune’s Rings in the 1980s. [Click here for the full story.]

In other food-related news, this month comes with a series of restaurant openings in Boulder and the surrounding area. VooDoo doughnut is in the process of opening on Arapahoe. The bright pink building is just off Arapahoe Road by King Soopers, where Taco Bell used to be. Opening date is still yet to be announced.

Also in Boulder, Natascha Hess’s The Ginger Pig, is scheduled to open this month. Asian food lovers can expect more of the same food they’ve enjoyed at her past stall at Rosetta Hall, or at her Food Truck during one of its many past stops at The Rayback Collective or at the now closed Isabelle Farm in Lafayette. Across town, Scandinavian-style cafe and bakery Suti + Co. opened under the helm of chef Andrea Uzarowski. The shop honors her Danish roots and expands on her existing catering business.

Lafayette Chef Matt Ochs, who has helmed kitchens for both Stem Ciders and Ghost Box Pizza, is helping the company make some major changes to Stem’s Denver location. Recently, Stem announced it is moving to a new location in Denver and opening a country-western-themed beer bar on its former site. The beer bar will be named “Howdy” and, among other offerings, it will serve the pilsner of the same name which Stem purchased from Post Brewing / Big Red F. last year.

Elsewhere in Lafayette, there is a new place on South Boulder Road to try if you’re looking for matzo ball soup, kugel, latkes, or gefilte fish as Button Rock Bakery has added a Jewish Deli to its offerings.

In Erie, Sweets Ice Cream shop has returned to running a single location in Old Town while shuttering its location on Hwy 7. Another long-standing Old Town favorite, 24 Carrot Bistro, has reason to celebrate, winning the town’s Biscuit Day gravy competition for the 6th year in a row.

FOR IMMEDIATE RELEASE February 5, 2021

COLORADO (February 5) – One of America’s oldest and most storied craft beer brands is ready to reintroduce itself. Starting this week, Boulder Beer’s new look and reimagined brand will officially hit store shelves and draft lines this week.

Founded in 1979, Boulder Beer was not just the first small and independent craft brewery in Colorado, but one of the very first in the nation. Despite many firsts such as Hazed & Infused—a hazy ale launched a decade before the hazy craze—Boulder Beer and its 40-year history was in jeopardy when it was announced that the brewery had planned to end distribution in October 2019 and close its brewpub last January 2020.

When Matthew Osterman, President and Founder of Sleeping Giant heard the news of Boulder Beer’s closure, he approached owner Gina Day with an idea to keep the brand alive through an innovative partnership giving Sleeping Giant creative and operational control while preserving the original ideals of the brand. Born and raised in Boulder, Osterman came of (legal drinking) age on Boulder Beer and couldn’t imagine a world without beer from the Colorado brewery that started it all.

“Partially it was an emotional decision because I didn’t want to see Boulder Beer evaporate into the mist…Boulder Beer is quintessentially Boulder,” says Osterman. “It feels a bit surreal to carry on the Boulder Beer brand because it was such an iconic concept that loomed so large for so long. We’re now able to be the stewards of the brand not just for the city of Boulder, but also for craft beer as a whole.”

“I’m very happy to see Sleeping Giant putting in the energy to keep it thriving and current because it’s such an iconic brand,” says Day. “Matt and his team have the flexibility to create and build new recipes and build new brands, so as far as I see it, this is his brand, he’s the one creating, doing, and orchestrating”, continues Day. In addition to updated branding, packaging,

and production systems, Sleeping Giant has been given the opportunity to update recipes and add entirely new beers to the portfolio. “We do still stay in communication and work together because we are partners. Matt touches base every couple of weeks and has hosted our former brewmaster, David Zuckerman, to taste through some of the beers, but he’s doing all the heavy lifting.”

Boulder Beer is bringing back some original favorites to include Hazed & Infused, Mojo, Shake Dark Chocolate Porter (including a year-round Nitro version) and SKO Buffalo Gold, an updated version of Buffalo Gold earmarked for Colorado distribution only. The featured innovation for 2021 is Bubbly By Nature Bubbly IPA, a new idea to capture the white space between easy-drinking Lagers, tropical IPAs, and the bubbly mouthfeel of Seltzers.

Hazed & Infused – The Original Hazy – The use of El Dorado, Mandarina Bavaria, CTZ, and Huell Melon creates a piney, earthy, floral accent underscored by a complex, dank, fruity backbone. – 5% ABV

Mojo – High Altitude IPA – Still driven by the use of Cascade hops, Mojo employs a mighty mix of hop bitterness and malt character that is rounded out by a citrus grapefruit finish. – 7.2% ABV

Shake – Dark Chocolate Porter – Using a blend of five different grains, this indulgent porter creates layers of velvety flavors blending notes of cream, cacao nibs, coffee and caramel. – 5.9% ABV

SKO – Buff Gold Beer – A mainstay since 1989, this is a beer that tastes like a beer. Updated to employ a lager yeast strain, SKO Buff Gold is crisp, clean and refreshing. – 4.8% ABV

Bubby By Nature – The Bubbly IPA – Tropical and juicy like an IPA, crisp and easy drinking like a lager, and more fruit-forward and lively like a hard seltzer. This innovative union between three popular styles results in its own naturally Bubbly style. – 4.5% ABV

Laws Whiskey Barrel-Aged Shake Dark Chocolate Porter – Made in collaboration with local Denver distillery Laws Whiskey House. A special limited release of their iconic Shake Dark Chocolate Porter, aged in Laws barrels. – 8.1% ABV

Boulder Than Ever Mixed 12 Pack – Featuring three 12oz cans each: Hazed & Infused, Mojo, Shake, and Bubbly By Nature.

With production and innovation as his main focus, Osterman reconnected with industry veteran Dave Duffy, CCO at Stem Ciders and former Division Director at New Belgium Brewing, with the

idea of developing a creative solution to support the sales and marketing for Boulder Beer. Under Duffy’s recommendation, Osterman turned to another industry titan in Greg Owsley, former Chief Branding Officer at New Belgium Brewing and founder of The Storied Brand, to consult on marketing strategy for the brand re-launch. In recognizing the clear opportunity for mutual growth and support, Osterman, Duffy and Stem Ciders Co-Founder, Eric Foster, came together with the idea of Boulder Beer partnering with Stem Ciders to handle the day-to-day sales and marketing for the re-launched brand.

“With our ability to sell and market both Boulder Beer and Stem Ciders, it becomes more efficient for wholesalers and retailers alike,” says Foster. “From a growth perspective, we’re able to help grow Boulder Beer in markets where we’re already well-established, and it also makes it easier for us to offer both brands as we enter new markets. It’s now one less sales person to have to deal with, one less sales meeting for distributors, and it makes it easy to bring on two great brands at once that both satisfy two different verticals. We think there’s extreme value from an efficiency standpoint.”

When it came time to reimagine the new look and feel for Boulder Beer it was integral to Owsley that the spirit of Boulder as a city and lifestyle be fully represented.

“The strategy we articulated for Boulder Beer, rather than resting on its OG laurels, was for the enterprise to reignite its pioneering flame and do so by tapping into the creative zeitgeist that is the city of Boulder and its people,” says Owsley.

“With the rebrand, each black & white photograph on every can is from a fellow Boulderite who used their lens to capture a viewpoint of Boulder’s inspiring natural setting,” continues Owsley. “Each design and color choice is hand-picked from the colors and textures that make up Boulder. Each beer, whether it’s an old favorite or a new concept, has been finessed to represent the hazed and infused memories that only the intertwined cultures of Boulder and Boulder Beer can bring.”

“We thought we needed to start fresh with an empty palette and reinvent,” says Duffy. “Boulder as a city has really evolved and we felt the brand should reflect that reinvention.”

Beginning this week, Boulder Beer will be available in 28 states and 5 countries. ###

Cider, Bluegrass and more liven up the fourth annual Boulder Craft Beer Festival

If Napa Valley brings to mind images of long-stemmed glasses, stomping grapes and wine tastings, than a mere mention of Colorado should conjure pictures of hops, barrels, yeast and grain. As one of the biggest centers for craft beer in the country, Colorado has become a destination for brew-lovers from all over the world, and Boulder County is certainly no exception. The fourth annual Boulder Craft Beer Festival is approaching this summer and there is a lot of excitement brewing over this relatively new – but largely attended – Colorado Beer Festival.

“I’ve heard it called the Napa Valley of Beer before. I think that’s really true,” offers Anna Salim, Vice President of Events with the Downtown Boulder Partnership, the sponsoring organization behind this annual festival of all things beer. “It’s just a good environment for craft breweries. People are really interested in craft beers. We have more than 30 craft breweries in Boulder County, so there is a great interest in craft beers and breweries. The brewers are very community oriented and it creates cooperation within the community as well.”

“We have such a great outdoor culture here in Colorado and I think that contributes greatly to craft beer,” offers Eric Briggs, Co-Owner of Liquid Mechanics Brewing Company, one of the attendees at the festival. Though they haven’t officially decided on which beers you’ll be able to sample that day, you just might be able to get a taste of the multiple award-winning Imperial Porter, which took home the gold at the 2016 U.S. Beer Open. “Though, the Brewers Association being located in Colorado must certainly have a lot to do with the craft beer following in Colorado as well.” The Boulder-based Brewers Association offers many resources for craft brewers – from the smallest and newest to the most established – and the Boulder Craft Beer Festival is another great way to get to know the other brewing professionals in the community.

New this year – the festival is featuring some local cider companies, including Colorado Cider Company, Stem Ciders and Wild Cider. However, the beer, of course, is still front and center in this community-focused celebration.

On August 19 at North Boulder Park, you’ll find more than 25 different local breweries, all offering up samples of their best brews. Popular favorites like Avery Brewing, Boulder Beer and Oskar Blues Brewery are joined by some up and coming brewing locals. “I always like seeing the great locals – Avery, Boulder Beer, our downtown breweries like Shine – but this year I’m excited to see breweries from outside (the Boulder area,” offers Salim. “Everybody knows Avery, but maybe no one heard of Crooked Stave before. It’s kind of fun to bring in new people outside of Boulder County to show awareness and give them an opportunity to show off a bit.” So if you’re unfamiliar with local brewers like Finkle & Garf, Asher Brewing Company or Mama Bears Brew, then you’re in for a fun beer-tasting adventure.

In addition to the beer samples, the producing team at the festival has organized the perfect music accompaniment for the event. Just as the Boulder area has a great craft beer following so, too, does it have a big Blues and Bluegrass scene. Blues trio The Red Petals will be playing earlier in the day and jam-grass/Americana band Wandering Natives hit the stage in the afternoon/evening. Live music, plenty of beer, plus several great local food trucks will round out the entire festival at the new, larger location for the annual festival – North Boulder Park.

If you’re not a big drinker – that doesn’t mean you can’t head out to enjoy the food, music and other fun throughout the day as well. “We also do a Designated Driver Ticket, which we sell in advance. It’s $10 and in exchange we give you a $10 food voucher, so there are plenty of people who don’t drink beer, or don’t drink, but would still like to come and enjoy it with their friends, and also we’re thinking of people getting home responsibly which people really appreciate,” says Salim.

If you’re thinking about travel to Boulder to partake in this popular annual festival, you’ll want to pick up tickets ahead of time, as the event has sold out every year so far.

“We usually sell out the tickets so I urge people to get them early so they know they can get in. People really like our VIP option and there are a limited number of those available, but the big thing that is great about that is you get to come in early and it gives you more time. You’re not in such a hurry to try all the beers, so you really get to take your time and enjoy it” Salim explains.

VIP Tickets are $50 per person in advance or $60 per person the day of the festival. The VIP tickets include early admission, a souvenir item and some extra samples from participating breweries. General Admission tickets are $35 in advance and will go up to $45 the day of the event. Whether you’re looking to get a taste of the many different local breweries, or if you’re a designated driver just looking for some alcohol-free fun, tickets are available at boulderdowntown.com.
