Originating as a beloved food truck in Fraser, Colorado, Shreddys Tacos has garnered widespread acclaim, winning “Best Food Truck” for four consecutive years. The decision to establish a permanent location marks a significant milestone for founder Eddy “Shreddy” Ferreiro, who brings her rich heritage and passion for Mexican cuisine to Boulder.

 

Born in Mexico, Eddy’s culinary journey is deeply rooted in the traditional recipes passed down from her grandmother. As an avid snowboarder residing in Winter Park for over two decades, Eddy combines her love for the mountains with her culinary expertise to create a unique dining experience.

 

Shreddy’s Tacos specializes in mouthwatering street tacos, featuring a variety of proteins including Al Pastor, Pollo Asado, Carne Asada, Carnitas, and Nopales. Each dish is crafted with the freshest ingredients and a dedication to authentic flavors.

“We are excited to make Boulder our new home and share our food with the Front Range community,” said Eddy Ferreiro. “Our journey from a food truck to a full-fledged restaurant has been incredible, and we can’t wait to welcome everyone to Shreddy’s Tacos.”
