In his first-ever pizza competition, Urban Field Chef and Co-Founder Nick Swanson placed 7th at the 2023 International Square Pizza Challenge in Las Vegas, NV March 28-30.

I was shooting for a top-10 finish and was thrilled to achieve it,” Swanson said. “To be around the best minds in pizza and be recognized as a contender for best in the world was one of the thrills of my life.”

Since its inception in 2007, the International Pizza Challenge has evolved to become the most prestigious pizza-making competitions in North America, if not the world. Hosted by the International Pizza Expo and Conference—the world’s largest pizza event—the Pizza Challenge showcases some of the greatest pizza chefs in the world.

After placing, Chef Swanson aptly named his competition pie “Lucky #7.” The build-out of the square: Caramelized Onion Cream, Fontina, Parmesan, Confit Garlic, Prosciutto di Parma, Arugula, Spiced Truffle Oil, Lemon Zest, Cured Egg Yolk, Maldon Sea Salt.

Urban Field opened on May 4th 2022 in South Main Station in downtown Longmont. Featuring a square pan pizza and a 16” round New-York style pizza, Urban Field is quickly gaining the reputation for the best pizza in Colorado. Inspired by three varieties of square pizza, Chef Swanson researched and developed his square pie for nearly two years prior to the opening of Urban Field. In the end, his square utilized qualities of Detroit-style, Roman-style and Sicilian-style pizzas. Once the pizza finishes cooking on the deck of an Italian-made Moretti Forni oven, the pizza is allowed to rest before being served to achieve a perfect frico, or crusty cheese edge.

COVID gave me plenty of extra time to research and experiment with all the various renditions of square pizza out there and to use the best parts and practices of each,” Chef Swanson said.
