Hai Hospitality planning for early 2024 launch on Fillmore Street

Denver, CO (May 25, 2022) — Hai Hospitality, the award-winning Austin, Texas-based restaurant group, today announced plans to open their concept, Uchiko, in Denver’s Cherry Creek Neighborhood in early 2024. Uchiko is a sibling concept to Uchi, which opened their Denver location in Rino in 2018. Uchiko, which means “Child of Uchi,” opened the original location in Austin in 2010, and most recently the second location launched in Post Oak area of Houston on May 23rd, 2022. Uchiko is the follow-up concept to the acclaimed Uchi, a contemporary Japanese restaurant that was James Beard award-winning Chef Tyson Cole’s first concept. This third location in Cherry Creek is slated for an early 2024 opening at 299 Fillmore Street.

“It’s now time for Uchiko to start spreading its wings outside of Texas,” said Hai CEO Tony Montero. “The Denver community has been extremely welcoming to us since we opened Uchi in 2018 and Cherry Creek is such a charming and dynamic neighborhood, we thought it was the perfect setting for Uchiko.”

Bold flavors with hints of smoke and char differentiate Uchiko from its sibling Uchi. Uchiko Cherry Creek guests can expect the brand’s celebrated interpretation of raw fish at the sushi bar balanced with more wood-fired items, yakitori grilled options, and further exploration of influences beyond Japan. Uchiko will have a full bar with hard-to-find Japanese whiskeys and a menu of “traditional cocktails with a twist” that pair nicely with the robust hearth-centric menu.

Architect of record is Semple Brown of Denver with Michael Hsu Office of Architecture leading interior design in partnership with in house team Hai Design Studio. The restaurant will seat approximately 175 people and will include a sushi bar, full cocktail bar, a private dining room, and outdoor patio seating.
