Last week, we headed over to try out a new addition to the Boulder healthy eats scene, Modmarket.

The inspiration for Modmarket came from European bistros serving fresh food quickly and inexpensively. The menu is made up of lots of fresh ingredients combined into velvety soups, fresh salads, and oven-fired flat bread pizzas. Salads are made before your eyes, allowing you to easily tweak ingredients or create your own. The menu also caters to different dietary requirements with vegetarian, vegan and gluten-free options abundant.

And the prices are super reasonable. A small salad for $5. Half a cheese pizza for $4. And a selection of $2/glass wines. Healthy food has finally reached fast food prices here.

We loved the salads we tried, which were fresh and flavorful, and the tri tip was an incredible add-on (for $3). The cashew butternut squash soup was flavorful and creamy without the benefit of cream (it’s vegan!). The flat bread pizza took a long time to arrive (our server apologized for the wait), and, while tasty, is definitely more flat bread than pizza (ie: don’t go in expecting a typical pie). But the whole wheat crust made us feel virtuous.

Our favorite part? The ingenious receipts that print the nutrition information of your meal! The receipts also have coupons and other useful information. Can’t wait to see innovations like that spreading everywhere!
