In August’s Challenging Elements, Roma Melrose of Roma’s Catering created a feast for editor Andra Coberly and photographer Joe Hodgson. The secret ingredient was peaches, which Melrose manipulated in several different ways with global influences. But our favorite dish was her beautiful, simple peach salsa. Melrose was kind enough to give the recipe to our readers. Here you are:
2 Cups peaches, seeded and chopped fine.
1 Jalapeno, chopped fine
1/2 Cup red onions, chopped fine
1/2 Cup chopped scallions
1/2 Cup chopped cilantro
1 Teaspoon salt
1 Teaspoon salt
1/4th Teaspoon sugar
Mix everything in a bowl, enjoy!
