The Mere Truffle

Just think, someone once plucked an ugly tuber from the ground, took a bite and thought, “This would be great in a soufflé.” That was the birth of the truffle as a delicacy (well, something like that). Today, truffles are the lifeblood of fine dining.

It’s white truffle season, and the folks behind Cured (1825 B Pearl St.) will once again bring Italian white truffles to their lovely Boulder shop. For the next four to eight weeks, you can order each Wednesday to pick up truffles each Friday evening. The white truffles are $11 per gram for 10 to 20 grams or $15 per gram from 20 to 60 grams; French black truffles will be less expensive but have not yet arrived.

This truffle season has not been entirely fruitful—making the harvest small but delicious.
